Comfort food good for the soul – come & dive in
Here is a recipe for a creamy and spicy soup for all who are in need of a bit of that warm belly feeling. It’s so easy to assume that comfort food equals unhealthy but homemade soups like this will quickly prove you wrong.
Spicy Cauliflower & Parsnip Soup
- 1 Head Cauliflower Small
- 1 Parsnip Medium
- 1 Onion Diced
- 1 Tsp Vegetable oil
- 1 Tsp Curry powder
- 1 Tsp Paprika
- 500 ml Water
- 100 ml Almond milk Unsweetened
- Heat the oil in a medium pan and add the onion, cauliflower florets and sliced parsnip. Cook on a low heat until beginning to soften.
- Add the spices followed by the water and almond milk. Cook until all the vegetables are done (approximately 10 minutes).
- Pour the contents of the pan into a blender and blend until smooth.
