Variety for health: Buddha bowl
Eating a healthy balanced diet doesn’t have to be complicated: think variety for health. As long as you include lots of fresh plants, i.e. fruits and vegetables, as well as wholegrains, you are on the right track. One of my favourite ways to eat the rainbow is to make a Buddha bowl. Make it out of salad veggies, hot and cold foods, leftovers – there really is no limit to what you can do. I love using green vegetables as a base and go from there. Crispy tofu cubes, homemade hummus, seaweed…the more variety in produce, the greater the variety in nutrition. Add a nice dressing and some chopped nuts and seeds to finish things off – perfect. Why not precook or prepare a few things and store them in the fridge, ready to make a Buddha bowl to take to work for lunch? Think brown rice, lentils, quinoa or sprouted seeds…these will be filling and tasty.
